Beef & Broccoli Stir-Fry

Ingredients
- 1 lb sirloin steak, sliced
- 1 lb broccoli
- 2 tbsp oyster sauce
- 2 tbsp soy sauce
- ¼ cup chicken stock
- 2 cloves garlic, minced
- 2 tbsp high-heat cooking oil
- 1 tsp cornstarch + 1 tbsp water
Method
Marinate the beef with 1 tsp soy sauce, a splash of rice wine, ½ tsp cornstarch and black pepper for 10 minutes. Stir together the sauce: oyster sauce, soy sauce and chicken stock. Blanch the broccoli in boiling water for 2 minutes until crisp-tender, then drain. Heat a wok over high heat, add the oil and swirl. Add the beef in a single layer and fry undisturbed for 1 minute, then flip, add the garlic and fry until no longer pink. Pour in the sauce and the cornstarch slurry and stir until it boils and thickens, about 30 seconds. Stir in the broccoli and serve immediately, with steamed rice for bigger appetites.
